Two fine wines!
Two prestigious wines are joining the range in the form
of Chablis Premier Cru Vaulorent and Chablis Grand Cru Les Preuses.
These appellations stand side by side in a sunkissed
terroir: the Premier Cru in fact adjoins the Grand Cru and
is one of the sub-climats of Fourchaume Premier Cru!
Its personality, similar to a Grand Cru, is worthy of being
matured entirely separately.
It is striking to see such marked differences in such a
close-knit sector. These 2023s were bottled at the start
of the year after a long period (14 months) of maturation
on the lees. The Premier Cru was matured 40% in new
228-litre barrels whilst the Grand Cru was fully matured
in third or fourth fill 350-litre barrels.
2,500 bottles of Vaulorent and 1,000 of Les Preuses have
been made, ready to be discovered in the spring.
Rather than lees stirring, which adds roundness, lees
gentle pumping over is instead used during the maturation
process to preserve the wine’s freshness. This adds a
wealth of lingering natural antioxidant compounds and
reduces the need for added sulphur!
Chablis Premier Cru Vaulorent 2023
Almond and lemon flower nose with a touch of pineapple.
Vibrant, fresh and rounded on the palate, the pineapple
returning with a toasted, very saline, particularly striking finish.
Chablis Grand Cru Les Preuses 2023
Gourmet aromas of peach and mango, fresh hazelnut notes
over a limestone base. Rich on the palate with citrus zest
touches and a very lingering limestone finish with hints
of toasted hazelnut.
