However, in 2003 Louis Bouillot sought to rediscover this taste
of yesteryear, of former cuvées, by making wine under Crémant
from Village appellations grapes. In 2006, these trials gave rise to
‘Les Grands Terroirs’, wines with personalities shaped by their
climats in Gevrey-Chambertin, Savigny-lès-Beaune, Saint-Aubin,
Saint-Romain, Saint-Véran and Chablis!
Since 2014, Louis Bouillot has been building what are now 170
hectares of vineyards in Burgundy, the best of which have created
three new ‘Les Grands Terroirs’ wines made in limited editions of
fewer than 10,000 bottles: Chenôvre, En Bollery and Les Lavots. A
long period of ageing helps to enhance their character.
