                                                       Noble Aligoté

                                                       Aligoté, an oft-neglected grape variety, has enjoyed
                                                       a revival spearheaded by a handful of passionate
                                                       producers known as Les Aligoteurs. Grégory Patriat
                                                       has been one of its strongest advocates.
                                                       At Les Ursulines, small and big are matured alike,
                                                       as showcased by these three Aligoté  cuvées!
                                                       After pressing, they undergo a long maturation
                                             © Serge Chapuis  cellar. They are refined in demi-muid barrels (450
                                                       period of 16 to 18 months (or two winters) in the
                                                       litres), one third of which are new. No lees stirring
                                                       or racking is used in order to preserve the wine’s
