Héritage du Conseiller
Paul Bouchard (1814-1898) represented the fifth generation,
and gave the region an international mission in his role as
Grand Conseiller and a charismatic politician.
The ‘Héritage du Conseiller’ wines, drawn
from select vineyards in France, pay tribute to
this iconic Beaune figure and offer Bouchard
Aîné & Fils’s full expertise and commitment
to Pinot Noir and Chardonnay.
Pinot Noir: grown in limestone-clay soils
and matured on the lees for four months,
just a quarter of the wines is placed in oak
barrels in order to highlight the freshness
and fruitiness of the grape variety. Garnet
red with delicate Morello cherry and soft
spice aromas, gourmet and silky on the
palate with a lingering finish of chocolate
and fruit notes.
Pinot Noir Rosé: these grapes are harvested
at night to preserve their freshness then
immediately pressed, before a gentle
fermentation is begun at low temperatures
to preserve the expression of the fruit. Clear
raspberry colour, with red fruit, citrus and
boiled sweets on the nose. Rich, fruity and
harmonious, this is a refreshing wine with
a lingering, tart finish.
Chardonnay: the plots are harvested and
vinified separately then showcased by four
months of maturation on fine lees, before a
quarter of the wine is matured in oak. It is
