A barrel cellar
for fine Chablis
Push open the heavy oak door and enter the radiant world of the new
J. Moreau & Fils barrel cellar, a space reflecting the fine white wines
that Lucie Depuydt and her team mature here so painstakingly.
In reality, two cellars have been made to hold
a total of 700 barrels devoted to Premier and
Grand Cru wines.
Built in record time, this barrel cellar is on the site
of the former warehouse, with careful thought paid
to barrel maturation of the Maison’s fine white
wines. Spacious corridors facilitate movement,
work and the handling of these large containers.
The cellar welcomed its first harvest in 2024,
whilst the second will house the next vintage.
This flexibility enables the long maturation period
of two winters that Lucie favours, as well as the
ability to work on two vintages at once. This
extended maturation period is rare in Chablis
and worth highlighting.
All of the house’s fine white wines are thus matured
in oak (30% to 45%) and in stainless steel vats.
The different barrel sizes – 228 litres, of course,
but also 300, 400 and 500 litres – offer a range of
expressions with varying oak influence, for blending
purposes and to enhance the complexity of the
wines. The barrels, from five different cooperages,
have shifted towards a slightly heavier toast level
to reduce the proportion of new barrels and
enable them to be kept for longer. This is both
an environmental and economic step, but one
that will never compromise the wine’s personality.
