Vertical tasting of Cabernet Sauvignon

1974 ‘You will be impressed by its freshness.’ Despite its complex
earthy, dried fruit notes of a mature wine, it still possesses lively,
fresh acidity and a beautiful silkiness on the palate.
The 1984 is in good shape, with gourmet notes of dark chocolate,
blackcurrant, dried back cherry, pepper and tobacco.
The 1994 offers up generous notes of toasty oak, blackcurrant,
liquorice and spices, whilst the 2004 displays black tea and
graphite aromas with a hint of salinity.
The 2014 is also breathtaking: aromas of raspberry, plum and
fresh fruit with well-integrated oak.
Finally, the 2021 with its floral, blackcurrant, chocolate and
tobacco notes – remains rich and elegant, and ready to drink.
The tasting highlighted the ability of Napa’s iconic grape variety
to age and gain complexity. The impact of each vintage was A commemorative golden sun
evident, with the coolest displaying greater acidity and more Jean-Charles has made a name for himself with his sparkling
earthy notes in the glass. jewels and his very personal line drawing creations, inspired by
the world of wine. To celebrate fifty years of Raymond Vineyards,
he has drawn a sun laden with symbols, adorning anniversary
bottles like a glorious ornament.
It incorporates all of the brand’s characteristics: rows of vines,
grapes, vine leaves, the volcanoes of Napa Valley, the cosmic
star, trembling thunderstorms, five decades of stars, the full and
quarter moon for biodynamics, and Louis XIV’s rays of sunshine like
diamond-cut crystals, with the name Raymond – the ‘king of Napa
Valley’ – written on the golden circles at the centre.
