    DE BOISSET
    WINTER 2020-2021

                                 Savigny-lès-Beaune 2018,

a fine white wine with a great future!

It has all the qualities of a great wine, and the tasting committees
at the Hachette guide and the Tastevinage both agree.

               in the Hachette
                guide 2021

This dashing young wine has a pale golden
hue, revealing its origins as a Burgundian
blend of rare Pinot Blanc with its floral
notes, and Chardonnay, to bring a touch
         of almond and toasted hazelnut.
As soon as it emerges from its cocoon, this
lovely wine titillates the taste buds with the
crispness of the 2018 vintage, which was
         all about excellence.
After a very mild winter, the vintage was
notable for two contrasting periods. The
sunny springtime meant the vines were
spared any frosts, although there were some
episodes of hail. The summer was then very
hot and dry, which led to ripening being
slowed in some places. Early harvesting,
with exceptionally high yields and fruit
in impeccable condition, offered all the
potential to make wines of great finesse.
The grapes were picked on 15 September
and pressed immediately. The juice was left
to settle in vats where alcoholic fermentation
began, before being transferred to barrels.
The wine remained for 11 months in the calm
of the cellar, half of it in barrels that had
already been used once, a quarter in new
oak, and a quarter in two-year-old barrels.
The lees were stirred for two months.
This is a Savigny-lès-Beaune which, when
young, will bring life to any aperitif, whether
in town or country. With the fullness of age,
it will make a wonderful accompaniment
         to fish and seafood.
Wine created by winemaker and enologist
         Laurent Mairet.
