This powerful yet fresh Côtes du Rhône is a blend of four varietals. Carignan and Syrah from the terraced hills of Aygues to the west, formed of pebbles, clay and fine sand, provide finesse. Grenache and Mourvèdre from selected plots on the higher slopes covered in large pebbles bring complexity and fruit.
The vinification sought to bring out the organoleptic characteristics of these varietals. As such, the Grenache was fermented with the Syrah, while the Carignan and Mourvèdre, which are more aromatic, were vinified separately.
To eliminate the heavier lees, the wines were racked off soon after the fermentation was completed. The fine lees were put in suspension until the cold weather arrived to enhance roundness and depth.
This Cairanne Grand Hospitalier 2019 is characterized by aromas of red berries and spices, with a soft freshness over a silky finale. A wine to be served with grilled meat or game.
The Chartreuse de Bonpas looks down over the River Durance near to Avignon. It was originally a fortified monastery built by the Hospitaliers of St. John of Jerusalem in the 13th century. The name comes from the history of the tumultuous river, wich had to be crossed at the ford, or "bon passage" (good passage) at the bottom of the priory. The name Bonpas comes from the Latin, bonus passus.
