Crémant de Bourgogne producer Louis Bouillot is investing in the vines, breathing new life into the exceptional plot of En Bollery in the heart of the Côte de Nuits.
The most sparkling of Burgundy producers, Louis Bouillot is expanding its estate in order to have more control over its grape supply. In 2014 and 2015, Louis Bouillot replanted seven hectares, mainly with Pinot Noir, the ultimate varietal for bringing structure and complexity. The vines are located in the lieu-dit of En Bollery, a beautiful plot between Vougeot and Flagey-Échezeaux.
Louis Bouillot’s aim is to have a sufficiently big plot to produce the highest-quality grapes for a blanc de noirs wine. Putting the plot together required three years of small acquisitions from 10 or so owners. The vines are ideally situated on a clay-limestone soil and the vineyard is nicknamed “La Vigne d’en Face” (The Vines Opposite) referring to their location opposite Le Clos Vougeot.
Establishing new vines is always a lengthy task, and it wasn’t until the 2017 harvest that grapes could finally be picked from this terroir that is home to some of Burgundy’s most illustrious wines. Louis Bouillot is following in the footsteps of the monks of Cîteaux, who also worked the land here to produce their wines. Today’s vines of En Bollery have now produced a very promising Crémant de Bourgogne which is just starting the ageing process. But it won’t be ready to enjoy before 2020, after a lengthy ageing of around 36 months.
