In 2016, Louis Bouillot submerged two of its sparkling wines, Perle de Vigne and Perle d’Or 2009, 60 meters beneath the sea of the Isle of Ouessant in Brittany, where the waters of the English Channel meet the Atlantic Ocean, and where the temperature is a steady 13°C. One year later, they were tasted at an event organized by Le Marchand de Vin in Montreal, during which guests discovered the impact of this unusual ageing process.
The nuances were sufficiently subtle that in December 2017, Louis Bouillot repeated the operation, this time for two years. We’ll have to wait until early 2020 to sample the result of this prolonged immersion.
